Ricotta & fig toasts

This easy peasy meal is one of my all-time favorite ways to enjoy fig season - which is short but so sweet. When I finally see those little green plastic baskets in the market, I can’t resist. I swear. I just black out and when I get to the checkout counter, they’re there. Oops. But who am I to complain?

The lightness of the fruit paired with the creamy richness of ricotta and olive oil is just heavenly. Honey and flaky salt bring out all the flavor notes that are just *kisses fingers*. This is more of a guide than a recipe because there are no measurements, but trust your gut and I promise it’ll be great.

Go on and get figgy with it, party people.

Ingredients

toast from bread of choice (my levain loaf was great!)

ricotta

figs

olive oil

honey

flaky salt, like maldon or fleur de sel

Assembly

  1. Toast your toast

  2. Slather toast with a layer of ricotta - amount depends on the size of your toast and how thick you like it (I like mine thicc with 2 Cs)

  3. Drizzle ricotta with a little olive oil and a little honey

  4. Top with sliced figs and flaky salt
